Banana Butter

 

 

 

10 ripe Bananas

3 tbsp Lemon Juice

¼ tsp Butter

2 ¾ lbs Sugar

1 Bottle Certo

 

 

 

 

 

1.         Mash the bananas to a fine pulp.

 

 

2.         Place 1 ½ lbs banana pulp in a large saucepan with the lemon juice,

butter and sugar.

 

 

3.         Heat slowly, stirring until the sugar has dissolved.

 

 

4.         Bring to a full rolling boil and boil hard for 1 minute.

 

 

5.         Remove from heat and stir in Certo.

 

 

6.         Skim, pot and cover in the usual way.
