Apricot (pulp) Jam

 

 

 

(Made from tinned pulp of fruit)

 

1 lb Prepared Fruit

1 ½ lbs Sugar

½ Bottle Certo

Juice of ½ Lemon

 

 

 

1.         Drain syrup from fruit and crush well.

 

 

2.         Measure sugar, prepared fruit and lemon juice into a large preserving

pan.

 

 

3.         Mix well, and heat slowly until the sugar has dissolved.

 

 

4.         Bring to a full rolling boil and boil over the hottest heat.  Stirring

constantly.

 

 

5.         Boil for 2 minutes, hard, remove from heat and stir in the Certo.

 

 

6.         Skim and pour quickly and cover in the usual way.
