Apple and Marrow Jam

 

 

 

1 lb Chopped Marrow

3 ½ lbs Sugar

1 lb Prepared Apples

2 tsp Ginger

1 Bottle Certo

 

 

 

1.         Prepare the 1 lb chopped marrow, discard the seeds and skin and cut

finely.  Cover with water and allow to stand overnight.

 

 

2.         Prepare 1 lb chopped apples by coring and peeling approximately 1 ½

lbs apples, placing them into a preserving pan with 1 gill water.

 

 

3.         Bring to the boil and simmer for 10 minutes, stirring constantly.

 

 

4.         Now measure 2 lbs prepared fruit and juice into pan, add sugar and

preserved ginger.

 

 

5.         Mix well and bring to a full rolling boil over the hottest heat and stir in

the Certo.

 

 

6.         Let stand for 5 minutes to cool slightly, then pour quickly and cover in

the usual way.
