Apple and Damson Jam

 

 

 

1 lb Prepared Apples

3 lb 6 oz Sugar

Juice of ½ Lemon

1 ¼ lbs Damson

¼ Pint Water

½ Bottle Certo

 

 

 

1.         Core and peel about 1 ½ lbs apples and cut into small pieces.

 

 

2.         Wash the damsons and put into a large preserving pan with apples

and water.

 

 

3.         Bring to the boil and simmer for 15 minutes stirring continually.

 

 

4.         Add sugar and lemon juice.

 

 

5.         Heat slowly until sugar has dissolved, stirring continually.

 

 

6.         Bring to a full rolling boil.

 

 

7.         Boil hard for 1 minute, remove from the heat and stir in the Certo.

 

 

8.         Skim if necessary and remove some of the stones.  Allow to cool

slightly to prevent floating fruit.  Pot and cover in the usual way.
