Apple and Blackcurrant Jam

 

 

 

1 lb Blackcurrants

1 ½ lb Apples

3 ¼ lb Sugar

¾ Breakfast Cup of Water

½ Bottle Certo

 

 

 

1.         Use only fully ripe fruit.  Peel and core the apples, cut into small

pieces.

 

 

2.                  Crush blackcurrants and add water and apples.  Simmer covered for 15 minutes.

 

 

3.         Measure 2 lbs prepared fruit and juice into preserving pan, mix with

sugar and bring to a full rolling boil over the hottest heat.  Stirring

constantly before and while boiling.

 

 

4.         Boil hard for 1 minute, remove from heat and add Certo.

 

 

5.         then stir and skim by turns for five minutes to cool slightly to prevent

fruit floating.

 

 

6.         Pour quickly and cover in the usual way.
