Blackberry and Apple Jelly

 

 

 

1 ½ lbs Apples

1 lb Blackberries

1 Pint Water

3 ¼ lbs Sugar

3 tbsp Lemon Juice

½ Bottle Certo

 

 

 

1.         Wash and cut up the apples roughly, add the water and simmer,

covered, for 10 minutes or until tender.

 

 

2.         Crush the blackberries, add to the apples, cook for 10 minutes.

 

 

3.         Strain through a jelly bag and measure the juice into a pan.  If

necessary make up to 1 ½ pints with water.

 

 

4.         Add the sugar and lemon juice, heat gently, stirring occasionally, until

the sugar has dissolved.

 

 

5.         Bring to a full rolling boil, stir in the Certo and boil rapidly for 1 minute,

stirring occasionally.

 

 

6.         Remove from the heat, skim if necessary.  Pot and cover in the usual

way.

 

 

 

NB.  It is not really necessary to strain the blackberries, this is only if seedless jam is required.
