Apricot and Apple Jam

 

 

 

5 oz Dried Apricots

2 pints Water

2 lbs Cooking Apples

4 lbs Sugar

1 Bottle Certo

 

 

 

1.         Soak the apricots in 1 pint of water for at least 4 hours.

 

2.         Bring to the boil and simmer, covered, for 30 minutes.

 

3.         Chop the apricots finely and mix with the juices, measure 1 ¾ lbs

prepared apricots and juice making up the weight with water if

necessary.

 

4.         Peel, core and chop apples, add 1 pint water, cover and simmer for 10

minutes.

 

5.         Crush the apples and simmer, covered for a further 5 minutes.

 

6.            Measure 1 ¾ lbs prepared apples.

 

7.         Put the measured quantities of prepared fruit into a large preserving

pan, add the sugar, and heat slowly, stirring, until the sugar has

dissolved.

 

8.         Bring to a full rolling boil and boil rapidly for 1 minute.

 

9.            Remove from the heat, stir in the Certo.  Skim, pot and cover in the

usual way.
